Anda Parathas

For anda/egg parathas proceed in the exact same way. After the first flip and after smearing the flipped side with some ghee ladle on the beaten egg. Let the egg mixture start to set on the top until such time as you’re comfortable flipping it (easiest with a flat, wide spatula). Flip, wait till the egg is done and flip one more time to crisp up the other side too (after smearing a bit more ghee).
