Piccolo: Soft scrambled eggs with fresh sea urchin, bone marrow and salsify

There’s always some version of scrambled eggs on their menu and it was no surprise that there was one at this celebratory meal. One of our number was disappointed it wasn’t the porky version he’d enjoyed in the summer but after he took a bite he wasn’t complaining much. There was some talk at the table of it being a bit too salty. Me, I thought it was great (even if I also thought the bone marrow was a bit redundant–uni and perfectly scrambled eggs is decadence enough for me).
