Travail: Salmon

The cocktail shrimp was followed by another striking presentation of what was one of the worst dishes on the night: rainbow chard wrapped salmon draped with chilli mayo and made to look like uni (the mayo was blasted with a blowtorch at the table by a young chef maniacally yelling “fire!”); and a nori wrapped salmon “roll” with wasabi ice on top. A pointless pun that didn’t taste very good.
