The Great Scraps of Fat: We got this because how can you resist? Well, maybe you can resist, but really you shouldn’t because this turned out to be pretty damned excellent and very well described by the title. What you get is crispy, deep-fried fatback, which somehow is not greasy at all and is indeed rather great, tossed with sauteed green onions, dried and pickled peppers and fermented black beans. I could have eaten the whole thing by myself, but then I would have died. We agreed that this should only be ordered to share by a group of 8-10 people.
