Hamachi – Asian Pear, Meyer Lemon, Yuzu, Serrano Chili
I got a couple of big bites of this from the missus. This was quite good though the plate was a little busier than it needed to be with compressed Asian pear tossed with yuzu vinaigrette, meyer lemon puree, shaved serrano peppers etc.. I believe the hamachi is cured with soy and brown sugar–whatever it was, it imparted a slightly smoky flavour; nice but I would have preferred the hamachi a little more naked with the other brighter flavours. Just a bit too much going on.
