Even though you can literally smell the chillies when you pour the sauce over rice, the heat doesn’t assault you as you eat it, building deceptively in the background till suddenly you realize you’re sweating profusely. This gives you space to enjoy the combination of tangy, slightly bitter and fermented-sweet flavours, with little bits of lime peel occasionally popping on your tongue and then it blows your ears out. Quite good.
