Second Course: Quail – Chicken Fried, Bacon Cheddar Biscuit, Sausage Gravy, Hot Sauce
I don’t quite get why so much haute cuisine these days in the US seems interested in “updating” down-home food, but that’s a larger trend. As it happens, this chicken-fried quail was quite lovely and the bacon and cheddar biscuit was excellent as well. I didn’t get much more than a light smear of the sausage gravy so cannot speak to that.
