Tartare – Beef, Egg Yolk, Mushroom, Black Truffle, Parmesan Milk

I was one of the people who got this and thought it was very good indeed. The tartare itself was nicely seasoned and the mushrooms matched well, texturally and with their earthy flavour; the egg yolk was perfect and the brioche was excellent. Of the dipping “sauces”, I thought the parmesan milk was very nice and that the black truffle emulsion was unnecessary.
