Peninsula: Sambal Sotong

Sambal Sotong, Squid stir-fried in a pungent Malaysian shrimp paste called belacan–whose name, aroma and flavour are very close to the Goan balchao. This aroma is a bit of an acquired taste (it’s made from dried/fermented shrimp) but if you like it you’re likely to like this dish (or the similar shrimp version).
