Chicken Biryani: I asked the young man who took our order if their biryani was made in some specifically Sri Lankan way and he said it was. When I asked what this entailed he said it was the fact that the chicken was boneless. We passed over this folly in silence but ordered it anyway. It was very good, but there’s nothing uniquely Sri Lankan about it—you can get this style of biryani up and down the subcontinent (but you can’t get very many better versions in Minnesota).
