Fish Cutlets: Things took a sharp turn towards the better with these fish “cutlets”. Americans would probably think of these as croquettes, and in Bengal we call them fish chops (though ours are more tubular than round). What they are is mashed fish, lightly spiced and made one with mashed potato (with a few small chunks left in), breaded and fried. One bite of one of these and I knew we were in for a good lunch. The texture of the filling was perfect, the flavours were perfectly balanced and there wasn’t one drop of grease from the deep-frying. And the cilantro chutnry was perfect as well. It was only a slight downer to learn that the fish was canned tuna….
