Piccolo: Wagyu beef with spot prawn crudo, avocado puree, nasturtium and finger limes

We were very excited about the Wagyu but it turned out to be much chewier than we expected it would be. As to whether this was because of the cut or how it was cooked I’m not sure. It was very far from bad, please believe me, but after the perfectly cooked squab we were prepared for the rapture.
