I got this on a whim just to see what “Chengdu style” fried rice might be. I’m probably missing some nuance but it was just fried rice. Very good fried rice, mind, with scallions, fluffy omlette and perfectly cooked rice. The boys loved the leftovers at dinner.
Chengdu-style fried rice needs pickled or preserved vegetables like ya chai or zhai chai. Sour pickled mustard greens could also work.
