Dessert

Cashew cream with bruleed grapefruit, salted nougatine and mint gelee. The cashew was pureed, cooked with cream and set like a pannacotta (though it’s a fair bit harder set) and was very good. The bruleed grapefruit I could have taken or left (though I did eat it all) but I liked the nougatine and the mint gelee a lot.
