This is a kabab made with thinly sliced and marinated boneless lamb/mutton/goat that is then grilled on a slab of heated stone (patthar). This, unfortunately, had been tenderized a bit too much (though I’d let out shrieks of joy if served anything approaching this in most Indian restaurants in the US). Please appreciate how artfully I have managed to keep the kabab itself completely out of focus while getting the cutlery nice and sharp and clear.
