Also, salsify soup seems to be a thing. I had some at Alma in January. This was better. The soup was more thickened froth than creamy but everything worked really well even after the pretty things drowned in it. The interplay between the unctuous soup, the minerally tongue and the sweetness of the maple was quite lovely.
