Frankly, we were hoping this would turn out to be Hunan Mao’s version of the dish with the greatest name of all time (which turned out to be surprisingly good as well at Hunan Style last year). I refer, of course, to “The Great Scraps of Fat”. Sadly, this was not it; very happily, it was very good in its own right. The tangy heat of the pickled pepper kept the skin from getting too cloying.
