Twice Cooked Pork

Twice Cooked Pork: This was a bit of an ordering cock-up on my part; what I’d meant to get was the classic Hunan braised fatty pork but I unaccountably confused it with this Sichuan classic which is one of my favourites. However, the version here was stir-fried with a lot of tangy cabbage which was a new take on it for me–not sure if that’s a Hunanese twist/version more generally or just how Hunan Style does it. This was very good and despite the large amount of food on the table it was completely devoured.
