Cooking Alu Parathas

Take your large ball of stuffed dough and gently flatten it on a floured surface. Spread it out as much as you can with the heel of your palm. Then roll it into a circle, being careful not to let it split. Smear the top with ghee and flip. Repeat the flip/smear as necessary till you have a paratha that’s got nice crisp bits on both sides.
