Now we get to a trickier beast: stuffed parathas, in this case alu/potato parathas. There is no need to layer the paratha with ghee for stuffed parathas so you can skip that step. Merely roll a flattened ball of dough into a small circle and place in the center a ball of mashed potato that is twice the size that the ball of dough was. Fold the edges of the dough over the mashed potato and seal. Seal it well.
